Cottage Cheese Queso Dip

Serves 2
Ingredients:
1 cup cottage cheese (Good Culture = great choice!)
1 tablespoon taco seasoning, or
1 teaspoon cumin
½ teaspoon each salt, pepper, and paprika
¼ teaspoon each onion powder and garlic powder
½ cup shredded pepper jack cheese or cheddar cheese
Optional toppings:
Diced red onion
Minced cilantro (include those stems!)
Diced tomato
More shredded cheese!
Instructions:
Add cottage cheese and taco seasoning to a blender or food processor and blend together until smooth. Use a silicone spatula to scrape down the sides of the blender.
Warm mixture in a small sauce pot on low heat and stir in cheese, taking care not to burn the queso. That silicone spatula comes in handy here, too.
Serve warm with tortilla chips or fresh veggies and your favorite toppings!
Tips:
Use a non-stick pot and low heat to melt the cheese without burning.
This recipe scales up very easily. You might as well use the whole tub of cottage cheese!
Full fat cottage cheese will be creamier, but non-fat works just as well if you’re looking to maximize the protein content.
Try other seasoning mixes, such as classic Frank’s RedHot for buffalo dip, or gochujang for a Korean-inspired flavor.
