PB Fit Protein Oatmeal Cookies

Craving that classic oatmeal cookie flavor but looking to lighten things up a bit? This recipe uses half the sugar to cut back on the sweetness while still delivering satisfying flavor. We also incorporated wholesome whole wheat flour and added PB Fit powder for a boost of nuttiness without the added fat. These cookies are still incredibly flavorful and perfect for a satisfying afternoon snack.  I like to eat one - okay, a few - after a hard workout!

Ingredients:

  • 1/2 cup butter, softened

  • 1/2 cup sugar

  • 1/3 cup PBfit powder

  • 2 scoops vanilla whey protein powder

  • 1/3 cup almond milk

  • 1 large egg

  • 1/2 tbsp vanilla extract (optional if using vanilla protein)

  • 2 1/4 cups quick cooking oats

  • 1 1/2 cups whole wheat flour

  • 1/2 Tbsp baking soda

  • 1/2 tsp salt

Directions:

  1. Preheat oven to 375

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the egg and milk, mixing until thoroughly incorporated. 

  4. Combine the dry ingredients in a separate bowl and whisk together.

  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

  6. Line a couple cookie sheets with parchment or a silicon baking mat

  7. Drop 1-2 Tbsp sized mounds of dough about 1-2" apart on the sheets and flatten slightly.

  8. Bake, one sheet at a time, for 15 minutes. Allow the cookies to cool completely before transferring.


Tips/Substitutions:

  • Whole wheat flour can be dense in baked goods.  The egg will help keep the cookies soft and chewy.

  • Feel free to substitute the whey protein powder for a plant-based protein powder. You can expect to add a little more almond milk to accommodate for the increased fiber.
